A very healthy, light and simple way to cook eggplants is to bake them. First, however, they must be left to rest in water and salt for at least an hour. They are great for fighting constipation at dinner.

With this recipe, you will make the aubergines even tastier thanks to the combination with chopped tomato and a little mozzarella. A thin slice of mozzarella is enough to obtain a truly irresistible dish.

We advise you to season everything with oregano and basil.

For this recipe we propose to use the rounder variety of courgettes, but you can also use the classic courgettes and cut them crosswise.

Just like the aubergines, you can cook the zucchini in the oven and in this case we will empty them and fill them with brown rice, a very nutritious cereal rich in minerals and fibers that will make this dish a very balanced dinner.
